What is dressed weight?

Dressed weight or hanging weight, refers to the weight of an animal post-slaughter, excluding its head, hooves, internal organs and other non-edible components.

Dressed weight includes all of the carcass's bones, meat and fat and allows for calculation of the true weight of the meat and product of the carcass.

For example, if you purchase 1/4 of an animal with a dressed weight of 50kgs, the weight of 50kgs includes bones, meat and fat.

This is not the weight of meat cuts that will be received once the carcass is fully processed due to trimming of fat, connective tissue, bone or moisture loss during the hanging process.

Using the dressed weight allows for the truest representation of the weight of the animal, allowing us to price our product most accurately.
